Desde su aprobaci\u00f3n, todos los jamones ib\u00e9ricos deben cumplir criterios muy concretos si quieren lucir una de las famosas etiquetas de colores (negra, roja, verde o blanca).<\/strong><\/p>\n<h2><strong><br \/>\n\u00bfQu\u00e9 determina esta norma?<\/strong><\/h2>\n<h3><strong>La Norma del Ib\u00e9rico establece:<\/strong><\/h3>\n<ul>\n<li><strong>La raza del animal: <\/strong>100\u202f% ib\u00e9rico o cruzado (m\u00ednimo 50\u202f%).<\/li>\n<li><strong>El tipo de alimentaci\u00f3n: <\/strong>bellota, cebo de campo o cebo.<\/li>\n<li><strong>El sistema de cr\u00eda: <\/strong>extensivo en la dehesa o intensivo.<\/li>\n<li><strong>La edad m\u00ednima al sacrificio: <\/strong>10 meses para cebo, 14 meses para bellota.<\/li>\n<li><strong>El peso m\u00ednimo del animal en canal: <\/strong>115 kg o 108 kg si es 100\u202f% ib\u00e9rico.<\/li>\n<li><strong>El etiquetado obligatorio, que clasifica los jamones seg\u00fan su ib\u00e9rico?<\/strong><\/h3>\n<p>Antes de este decreto, <em>hab\u00eda confusi\u00f3n en el mercado: demasiadas etiquetas, poca transparencia y casos de picaresca.<\/em> El objetivo de la nueva norma fue proteger al consumidor, garantizar la calidad y reforzar el prestigio de un producto \u00fanico en el mundo.<\/p>\n<p><strong>\u00a0<\/strong><strong>\u00bfY si un jam\u00f3n ib\u00e9rico no cumple alguno de los requisitos?<\/strong><\/p>\n<p><strong>Aqu\u00ed entra en juego el concepto de los jamones fuera de norma.<\/strong><\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<h2><strong>\u00bfQu\u00e9 es un jam\u00f3n fuera de norma?<\/strong><\/h2>\n<p>Un jam\u00f3n fuera de norma es una pieza que, por no cumplir alguno de los puntos exigidos en la normativa, no puede ser etiquetada oficialmente como <em>\u201cjam\u00f3n ib\u00e9rico\u201d.<\/em> <strong>Eso no significa que sea de menor calidad.<\/strong><\/p>\n<p><strong>En la mayor\u00eda de los casos, se trata de jamones procedentes del mismo tipo de cerdo ib\u00e9rico, criados y alimentados de forma muy similar, pero que no alcanzaron un requisito muy espec\u00edfico.<\/strong><\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<h4><strong>\u00bfPor qu\u00e9 un jam\u00f3n se queda fuera de norma?<\/strong><\/h4>\n<p><strong>Algunos motivos frecuentes:<\/strong><\/p>\n<ul>\n<li>El animal no alcanz\u00f3 el peso m\u00ednimo en canal: 115 kg (o 108 kg si es 100\u202f% ib\u00e9rico).<\/li>\n<li>Aunque se aliment\u00f3 de bellotas, no engord\u00f3 lo suficiente en montanera (m\u00ednimo 46 kg en al menos 60 d\u00edas).<\/li>\n<li>El cerdo fue sacrificado antes de la edad m\u00ednima.<\/li>\n<li>La entrada o salida de montanera no se ajust\u00f3 al calendario oficial.<\/li>\n<li>Durante el proceso de curaci\u00f3n, el jam\u00f3n perdi\u00f3 m\u00e1s peso del esperado y no lleg\u00f3 al peso final exigido.<\/li>\n<\/ul>\n<p><strong>\u00a0<\/strong><strong>\u00a0<\/strong><\/p>\n<p><strong>En resumen<\/strong><\/p>\n<ul>\n<li>La Norma del Ib\u00e9rico garantiza transparencia y calidad en el mercado del jam\u00f3n ib\u00e9rico.<\/li>\n<li>Los jamones fuera de norma no cumplen alg\u00fan punto concreto de esa normativa, pero pueden tener una calidad y un sabor
