{"id":347,"date":"2019-08-06T10:55:31","date_gmt":"2019-08-06T08:55:31","guid":{"rendered":"https:\/\/sanchezalcaraz.com\/?p=347"},"modified":"2019-08-06T11:15:26","modified_gmt":"2019-08-06T09:15:26","slug":"tartar-de-jamon-iberico-y-yema-curada","status":"publish","type":"post","link":"https:\/\/sanchezalcaraz.com\/en\/tartar-de-jamon-iberico-y-yema-curada\/","title":{"rendered":"Tartar de Jam\u00f3n Ib\u00e9rico y Yema Curada"},"content":{"rendered":"<p>El tartar es un plato muy apetecible que se sirve fr\u00edo y c\u00f3mo entrante es estupendo en cualquier \u00e9poca del a\u00f1o.<\/p>\n<p>\u00bfConoc\u00e9is esta receta?<br \/>\nMuchos de vosotros habr\u00e9is disfrutado de este plato con salm\u00f3n, quiz\u00e1s sea esta la receta m\u00e1s conocida, pero ya sab\u00e9is que la cocina da mucho juego y que no hay nada como experimentar, sobre todo si los ingredientes combinan bien y son tan ricos como estos.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-352\" src=\"https:\/\/sanchezalcaraz.com\/wp-content\/uploads\/2019\/08\/Tartar-de-jamon-2.jpg\" alt=\"Receta de Tartar de jamon iberico\" width=\"900\" height=\"601\" srcset=\"https:\/\/sanchezalcaraz.com\/wp-content\/uploads\/2019\/08\/Tartar-de-jamon-2.jpg 900w, https:\/\/sanchezalcaraz.com\/wp-content\/uploads\/2019\/08\/Tartar-de-jamon-2-768x513.jpg 768w, https:\/\/sanchezalcaraz.com\/wp-content\/uploads\/2019\/08\/Tartar-de-jamon-2-18x12.jpg 18w, https:\/\/sanchezalcaraz.com\/wp-content\/uploads\/2019\/08\/Tartar-de-jamon-2-700x467.jpg 700w, https:\/\/sanchezalcaraz.com\/wp-content\/uploads\/2019\/08\/Tartar-de-jamon-2-800x534.jpg 800w, https:\/\/sanchezalcaraz.com\/wp-content\/uploads\/2019\/08\/Tartar-de-jamon-2-450x301.jpg 450w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/p>\n<p>Hoy os dejamos una receta de Xanty El\u00edas, un chef con una conocida trayectoria profesional en restaurantes de alta cocina como Arzak, que ahora reinventa la alta cocina en su Restaurante Acanthun.<\/p>\n<p>C\u00f3mo sab\u00e9is el mundo del ib\u00e9rico est\u00e1 lleno de sabores apasionantes, y aunque bien es cierto que no hay nada como degustar una loncha de un buen jam\u00f3n ib\u00e9rico para saborear y apreciar todos sus matices, su combinaci\u00f3n en la cocina con otros ingredientes nos da un toque y un sabor excepcional a nuestros platos.<\/p>\n<p>Prepara un delicioso tartar de Jam\u00f3n Ib\u00e9rico con esta receta de Xanty El\u00edas<\/p>\n<h3>Ingredientes (4 personas)<\/h3>\n<h4>Para las yemas:<\/h4>\n<ul>\n<li>4 huevos de campo de 50 gr frescos<\/li>\n<li>200 gr de az\u00facar<\/li>\n<li>300 gr de sal fina yodada<\/li>\n<li>Agua<\/li>\n<\/ul>\n<h4>Para el tartar:<\/h4>\n<ul>\n<li>Jam\u00f3n ib\u00e9rico 440 gr<\/li>\n<li>20 gr de pepinillos en vinagre de jerez<\/li>\n<li>35 gr de cebolleta fina fresca<\/li>\n<li>8 alcaparras<\/li>\n<li>10 gr de mostaza de Dijon<\/li>\n<li>4 gr de mostaza antigua<\/li>\n<li>Aceite de Oliva Virgen Extra<\/li>\n<li>Vinagre<\/li>\n<li>15 gr de manteca de cerdo ib\u00e9rico<\/li>\n<\/ul>\n<h4>Elaboraci\u00f3n para la yema:<\/h4>\n<p>Mezclaremos el az\u00facar y la sal muy bien y pondremos sobre ellas las yemas limpias de germen.<\/p>\n<p>Cubriremos con la otra parte de la mezcla de sal y az\u00facar. Dejaremos durante 18 minutos. Despu\u00e9s, con cuidado, pasaremos a 5 minutos de agua para limpiar el exterior de la yema y reservamos en papel secante con un poco de Aceite de Oliva Virgen Extra.<\/p>\n<h4>Elaboraci\u00f3n para el tartar:<\/h4>\n<p>Lo fundamental de todo es cortar el jam\u00f3n a cuchillo con dados no superiores a los 1,5 mm para que la textura en boca sea muy diferente. As\u00ed tambi\u00e9n picaremos los pepinillos y cebolletas que dejaremos ali\u00f1ando con el vinagre y la mostaza de Dijon, y un poco de aceite de oliva.<\/p>\n<h4>Final y Presentaci\u00f3n:<\/h4>\n<p>Mezclaremos los dos s\u00f3lidos para ali\u00f1ar el jam\u00f3n y dejaremos a punto de textura a\u00f1adiendo la manteca de cerdo con textura pomada, y rectificaremos de sal y pimienta. Pondremos en un molde y sobre el jam\u00f3n dejaremos caer con cuidado la yema curada, que le pondremos un toque de Aceite de Oliva Virgen Extra para darle m\u00e1s brillo.
